Visiting Santorini in winter time, is a totally different experience.  It is for people who are looking to relax, enjoy walking, reading or even painting.
A nice morning walk in Fira and a coffee at the square where you can get your newspaper and read it during coffee time.  Visit the archaeological museum, SANTO Winery for a wine tasting or even a coffee in the afternoon and enjoy the spectacular sunset, the wine museum at Vothonas and see the impressive caves and learn about the procedure of making wine in the past.
Walk from Fira to Oia, when the weather is nice and take spectacular photos of the different colors of the sky and sea.  Walk in Pyrgos village and enjoy the  view from the top of the village where the casltle is, and meal at one of the taverns of the village. 
Visit Emporio village, walk through the narrow alleys and take photos of the small yards and  the castle of the village.  Walk or drive to the windmills and see how they were inside.
A pic nic at the beach when there is a nice sunshine day or at a beach tavern, at Kamari or Perissa.
And why not see a movie at the cinema at Kamari.  Most movies are in English.
Several cafes, bars, souvlaki places shops are open the whole year round at Kamari.
Nightlife is not so active.  A drink at the jazz bar of KIRA THIRA, or GROOVE bar at Kamari is a nice idea for an evening out.  Fridays and Saturdays there are more options though and sometimes live events.
 
Definitely you will not be able to enjoy the beach, but there are many other things to do and believe me you will enjoy the island and if the weather is not so nice, you will relax at your house.
